- 00:07:33there's no way Chef Ramsey is going to

- 00:07:57seeing like high-end appliances range I

- 00:08:05word I'm looking for my home Chef is

- 00:21:56got fennel apples that's a a fennel and
- 00:21:59apple um salad with a citrusy vinegret
- 00:22:02where are you from I'm from Alabama
- 00:22:03they're not putting fennel and SLO in
- 00:22:05Alabama usually not usually
- 00:22:08no I'm Jonathan I'm from Colombiana
- 00:22:10Alabama I'm a science camp coordinator
- 00:22:12and a home cook on a lot of Friday
- 00:22:14nights my driveway becomes kind of a
- 00:22:16little restaurant it's about building
- 00:22:19community and food being a thing that
- 00:22:21brings you together I have a lot to
- 00:22:23prove in this competition I'm a home
- 00:22:25cook going in with professionals and
- 00:22:28I've got a to prove that you know we've
- 00:22:29got a lot to offer just being homecooks
- 00:22:32but I understand flavor and I know how
- 00:22:35to cook I'm going to apply all of those
- 00:22:37things and hopefully stick to my
- 00:22:38Southern Roots and I think that could be
- 00:22:40what wins me this
- 00:22:42competition have you ever cooked with
- 00:22:44this type of pork steak yes sir um a lot
- 00:22:46of fat a lot of flavor in there right

- 00:22:58how's the rice over there it's a tough
- 00:23:00rice to cook I thought it would be very
- 00:23:02cute to do a Herby shrimp Bowl cuz I had
- 00:23:05gotten dill and parsley as well but then
- 00:23:07of course life happens right I overcook
- 00:23:10the rice and I'm like what do I do yeah
- 00:23:12I'm going to do a curry sauce and I
- 00:23:14create a shrimp Curry bowl and I'm
- 00:23:18trying to be sneaky you know like let's
- 00:23:20just make the curry sauce a little thick
- 00:23:21and do it over the rice and try to hide
- 00:23:23the rice a little bit I'm
- 00:23:26so you want to just cook it right off
- 00:23:28the ground and then go right to the
- 00:23:29plate with it or I want to let it rest
- 00:23:30for a few minutes and then maybe Slice
- 00:23:32It Against the Grain since it's kind of
- 00:23:33a tough cut of meat all right you know
- 00:23:35what's up it's real life now chefs wo on
- 00:23:37the middle floor there's no room for
- 00:23:40mediocrity being a leader being a
- 00:23:42restaurant tour it's about finding great
- 00:23:44people and I do that better than anyone
- 00:23:47and I'll be honest I've got my eyes on a
- 00:23:49few
- 00:23:50chefs how you feeling sir I'm feeling
- 00:23:53good man I changed my recipe like 10

- 00:24:27learn Sergio's cooking with ego honestly

- 00:26:26there's some real clear standouts shall
- 00:26:28we taste absolutely let's start with the

- 00:26:45gas Street there's hardly anything on
- 00:26:48there no veg no veg no starch no
- 00:26:52starch this is not a good look
- 00:26:59why is it so sweet great question Chad
- 00:27:02that's very strange every mouthful I
- 00:27:04take across these dishes I'm planning my
- 00:27:06strategy it'll be very koi and not give
- 00:27:09too much away to NAA and Richard some of
- 00:27:11the most important comments I'm keeping
- 00:27:13up here let's go for the seab
- 00:27:17bass skin not
- 00:27:21seared yeah so inside it's cooked
- 00:27:23beautifully gorgeous but the skin is so
- 00:27:25soft veg just cooked well I spot
- 00:27:28Brilliance a mile away but I can taste
- 00:27:30it instantly and that se bass was cooked
- 00:27:32beautifully that's what I need on my
- 00:27:36team how do they cook this thing oh dear
- 00:27:40have a cooked damn
- 00:27:42wow Salon what cook in the right mind
- 00:27:45would cook a skin nice and crispy and
- 00:27:47then dunk it in a puree it's almost like
- 00:27:49you're trying to hide it like it looks a
- 00:27:51little dark
- 00:27:52too very end of
- 00:27:54season okay scallops that is mim
- 00:27:58very minimalistic I am definitely hoping
- 00:28:02I'm selected by Chef Ramsey he is one of
- 00:28:04my biggest Inspirations for becoming a
- 00:28:06chef great sir scallop is cooked really
- 00:28:09really nice yeah I didn't watch any of
- 00:28:11you cook on the top floor but I've
- 00:28:14definitely spotted some great potentials
- 00:28:17for my
- 00:28:18team right should we move to the middle
- 00:28:19floor
- 00:28:21sure what is this a chizo a chizo this
- 00:28:25is a like a corn puree almost like a
- 00:28:27fresh corn corn grits trees are not
- 00:28:29exactly a high in tough to work with the
- 00:28:32fact that it's that dry means it was
- 00:28:33really overcooked too these guys are
- 00:28:36bagging on that Treo dish but the spice
- 00:28:38with the sweetness it danced in my mouth
- 00:28:40and I think this is a sleeper dish right

- 00:28:46trout tough one bold whole fish cooking
- 00:28:49I respect it what's the puree zucchini
- 00:28:52brown butter puree oh
- 00:28:54beautiful there's some heat in there as
- 00:28:56well oh wow
- 00:28:58this is interesting all right so we got
- 00:29:00a skirt steak with some pharoh and
- 00:29:02Brussels and a spinach chimmy
- 00:29:05churry steak is stunning that is exactly
- 00:29:09what that steak is supposed to taste
- 00:29:10like you can tell it was cooked at the
- 00:29:12perfect
- 00:29:13time all right what's this so we got a a
- 00:29:16Porch Steak right here uh-huh it's
- 00:29:19beautifully man the rubs good the rubs
- 00:29:22good the steak is cooked well it's a
- 00:29:23tricky cut very well balanced in these
- 00:29:25dishes I'm looking for flare restraint
- 00:29:29but more importantly every mouthful I
- 00:29:31want to taste passion now whoever cooked
- 00:29:33that pork steak has that flare I'm
- 00:29:35looking for hopefully Richard or Naisha
- 00:29:37doesn't snatch them up shrimp rice we
- 00:29:41have a shrimp and rice bowl using our
- 00:29:43boreo rice and a turmeric based Curry
- 00:29:46that's not a Boro rice that's overcooked
- 00:29:49rice who the hell am I to think that I
- 00:29:52could hide my rice from Chef Ramsey huh
- 00:29:54we could have done more with the rice
- 00:29:56seems like an afterthought second floor

- 00:29:59hoping that no one realizes that there's
- 00:30:02a delicious Curry there there are
- 00:30:03definitely things that I'm not talking a

- 00:30:11potted meat so this is done with layers
- 00:30:14of Cel Roots Comet wrapped in large kale
- 00:30:18leaves I mean replace the potted meat
- 00:30:20with some venison I've seen this in one
- 00:30:21of your book show this is
- 00:30:23crazy cheesy grits H making a St hand
- 00:30:28out dish from the basement is really
- 00:30:30what this competition is about I know
- 00:30:32we're all thinking we want whoever made
- 00:30:34that dish on our
- 00:30:36team chicken
- 00:30:44tenders a little too much on the
- 00:30:46Rosemary but I'm happy with the cook on
- 00:30:47the chicken tenders just don't know if
- 00:30:49you put a rosemary cream sauce with
- 00:30:52pickle cucumbers
- 00:30:54sorry right so this uh individual forgot
- 00:30:57to pick up a protein so we turned it
- 00:30:59into a vegetarian cauliflower steak
- 00:31:02puree and little
- 00:31:05fluet you know we got no blenders down
- 00:31:08there so that's hand puree wow
- 00:31:09cauliflower is having a moment and uh
- 00:31:11I'm having a moment with that dish yeah
- 00:31:13this cauliflower dish to me it was the
- 00:31:15most beautiful visual dish I need
- 00:31:18whoever cooked this on my team I just
- 00:31:21have to make sure Gordon and Aisha don't
- 00:31:23pick them before I do now this protein I
- 00:31:26didn't expect to see in the basement the
- 00:31:28loiner lamp how did the top second floor
- 00:31:30miss that one How does it go down to the

- 00:32:11elevated right that shows you what you
- 00:32:13can do with three ingredients

- 00:32:18they actually like this dish that has
- 00:32:20almost nothing on

- 00:32:28all agreee there's some hits and there's
- 00:32:30some misses
