- 00:00:08$12 for the entire week. This will be
- 00:00:10including breakfast, lunches, and
- 00:00:12dinners. I haven't done an extreme
- 00:00:14grocery budget challenge like this for
- 00:00:16breakfast, lunch, and dinner in quite
- 00:00:17some time. So, to say that I'm nervous
- 00:00:19about this is an understatement. So,
- 00:00:21what we are going to be doing today is
- 00:00:23we're heading over to Walmart. It's just
- 00:00:24the cheapest grocery store in my area.
- 00:00:26I'm going to be filling up my grocery
- 00:00:28cart with only $12 worth of groceries.
- 00:00:31And I'm going to be strategic about what
- 00:00:33I place in my cart. I really want
- 00:00:35grocery items that stretch, that are
- 00:00:37nutrient-rich, and high in protein. I
- 00:00:39want to be eating delicious this week. I
- 00:00:41don't want to feel like I'm eating like
- 00:00:43cardboard. These meals are going to be
- 00:00:45good according to my plan. But let's get
- 00:00:47to the store. I'm bringing you along
- 00:00:48with me and then we're going to get back
- 00:00:50home and get to cooking this week. All
- 00:00:52right, here we are. are $12 in my pocket
- 00:00:54and it's time to see just how much I
- 00:00:56could get to feed myself for this next
- 00:00:58week. Can I make it work? Well, let's
- 00:01:01find out. First, I'm picking up this box
- 00:01:03of apple cinnamon oatmeal. There's 10
- 00:01:05packets in it. And since it is flavored
- 00:01:07with apples and cinnamon, it's a pretty
- 00:01:09good value, so I'm throwing that in my
- 00:01:11cart. Now, I'm down the baking aisle.
- 00:01:13I'm going to be picking up a 2 lb bag of
- 00:01:15allpurpose flour. I'm thinking I'm going
- 00:01:18to be using this flour for maybe some
- 00:01:20homemade bread and tortillas, but I'll
- 00:01:22see what I end up using this flour for
- 00:01:24in the end. Now, I'm going down the
- 00:01:26dried bean and lentil aisle. I'm picking
- 00:01:28up a one lb bag of dry lentils along
- 00:01:31with a one lb bag of dry pinto beans.
- 00:01:34I'll also be throwing a one lb bag of
- 00:01:36white rice in my cart. Lentils and pinto
- 00:01:39beans are great meat substitutes.
- 00:01:41They're super affordable and they're
- 00:01:42super high in protein. I'm off to the
- 00:01:44produce area now. Just because I'm on an
- 00:01:46extreme budget doesn't mean I'm not
- 00:01:48getting produce. Potatoes stretch and
- 00:01:50they are wonderfully priced right now.
- 00:01:52So, I'm picking up a 5 lb bag of
- 00:01:54potatoes. I'm also wanting some fruit
- 00:01:56this week. So, I'll be picking up three
- 00:01:58bananas. Apples would also be wonderful
- 00:02:00this week. I'm looking at all the prices
- 00:02:02per pound for apples, and I'm deciding
- 00:02:04on these ones just because they're the
- 00:02:06least expensive per pound. I'll also be
- 00:02:08getting a yellow onion and two jalapenos
- 00:02:11for added nutrients and flavor this
- 00:02:13week. You can't go wrong with a big huge
- 00:02:15bag of carrots. I have no idea what I'm
- 00:02:17going to be using these carrots for, but
- 00:02:19I'm getting them and I'm sure I'll find
- 00:02:21some use for them. And then Roma
- 00:02:23tomatoes are pretty inexpensive per
- 00:02:25pound, so I'll just pick up one of
- 00:02:26those. Here's all of my groceries with
- 00:02:28the prices that will hopefully get me
- 00:02:30through. I have my bag of flour, 5 lbs
- 00:02:32of rusted potatoes, three bananas. I
- 00:02:35have my one lb bag of lentils along with
- 00:02:37my one lb bag of pinto beans, my
- 00:02:39carrots, tomato, and then I have my
- 00:02:41apples and cinnamon oatmeal. I'm really
- 00:02:43excited about this oatmeal, and I'm
- 00:02:45super excited that there's already like
- 00:02:47cinnamon and apples in it. Next, I have
- 00:02:49my bag of rice along with my two
- 00:02:51jalapenos. Then, I have my yellow onion
- 00:02:54and two apples. I'm very excited about
- 00:02:56this. Let's get home and let's get to
- 00:02:58cooking and let's see what we create.
- 00:03:03I just got back from the store and I am
- 00:03:05going to be starting on breakfast soon,
- 00:03:07but I do want to prepare my pinto beans.
- 00:03:10I'm going to be making these pinto beans
- 00:03:11for dinner tonight in a recipe and I
- 00:03:14want to prepare them now just so they
- 00:03:17can be ready for this evening. So, I'm
- 00:03:18just starting out. I have my one lb bag
- 00:03:21of pinto beans. I'm going to be batch
- 00:03:24making these pinto beans. So, I'm making
- 00:03:26them all in one batch for this week.
- 00:03:29It's just easier to cook like a large
- 00:03:31batch of pinto beans together other than
- 00:03:34like, you know, making a cup here and
- 00:03:36there because they do need to simmer for
- 00:03:38a while. But I'm just rinsing my pinto
- 00:03:40beans right now. I'm going to remove any
- 00:03:42like broken beans. Um, kind of like
- 00:03:46this. I like to rinse my pinto beans
- 00:03:48like this just because it removes any
- 00:03:50debris that might be on the beans just
- 00:03:52because you know the way that beans are
- 00:03:54grown. I'm going to let my beans soak in
- 00:03:57water for a couple of hours. You might
- 00:04:00be asking yourself or wondering why let
- 00:04:02my beans soak. So, you of course do not
- 00:04:05have to let your beans soak at all. I
- 00:04:08don't always let my beans soak.
- 00:04:09Sometimes I simply don't have time. And
- 00:04:11that's totally fine. But the reason why
- 00:04:13I do like to let my beans soak is
- 00:04:15because it makes the beans like super
- 00:04:17pillowy soft in the end. It
- 00:04:20significantly reduces the cooking time
- 00:04:22down. Plus, it really aids in digestion
- 00:04:25and gas. So, if you're worried about gas
- 00:04:28with beans, I definitely recommend
- 00:04:30soaking them. It really helps. That's
- 00:04:31why I like to soak my beans. Let's go
- 00:04:33get started on breakfast. I'm hungry.
- 00:04:35For breakfast, day one, I am doing a
- 00:04:38packet of oatmeal. I actually might be
- 00:04:40doing two packets today because there
- 00:04:41are 10 packets in this oatmeal um pouch
- 00:04:45container thing. So, I think I will be
- 00:04:48doing two packets today since I do have
- 00:04:50enough. And then I will be doing a
- 00:04:52banana with my two packets of oatmeal
- 00:04:54since I am on the hungrier side right
- 00:04:56now. So I'll be doing these two packets
- 00:04:58of oatmeal with one banana. I'll be
- 00:05:01doing this for breakfast 1 through
- 00:05:03three. I kind of came to the conclusion
- 00:05:05about since I do have enough to do two
- 00:05:08packets of oatmeal for 3 days because
- 00:05:11I'm doing seven days total. So there's
- 00:05:1310 packets. So I have three extra if I
- 00:05:16did one packet a day. So, I'll be doing
- 00:05:19for breakfast days 1 through three, two
- 00:05:21packets of oatmeal and then one banana.
- 00:05:24Let's go put some water in this and
- 00:05:25let's get this oatmeal cooked up. I'm
- 00:05:27quite surprised two packets of oatmeal
- 00:05:29made for so much oatmeal. I definitely
- 00:05:32don't think I'm going to be trying to
- 00:05:34snack in between these two meals. Since
- 00:05:36I didn't add snacks into my budget for
- 00:05:38this week, I do not have snacks to snack
- 00:05:40on. But, like I said, these two packets
- 00:05:42of oatmeal made for so much oatmeal. And
- 00:05:44then the banana on the side adds some
- 00:05:47nice fruit for nutrients. And then the
- 00:05:49oatmeal has protein. And like I said,
- 00:05:51it's very filling. So, I'm very excited
- 00:05:54for this filling, nutrientrich
- 00:05:56breakfast. I don't think I'm going to be
- 00:05:58thinking that I need snacks in between
- 00:05:59breakfast and lunch today, which I'm
- 00:06:02very excited about. Right now, we are in
- 00:06:04between breakfast and lunch. And I
- 00:06:06thought, what would go so good with
- 00:06:07lunch? Rustic warm bread. So, we are
- 00:06:11getting started on this rustic bread
- 00:06:14recipe. I actually used to make it when
- 00:06:16my husband and I were first married and
- 00:06:18we were barely making ends meet. So,
- 00:06:20it's a great bread recipe because it
- 00:06:21doesn't have any yeast in it. And I know
- 00:06:23yeast could be very pricey at the
- 00:06:26grocery store. So, this is just a very
- 00:06:28affordable bread recipe. It is 2 cups of
- 00:06:30allpurpose flour. It's just the flour
- 00:06:32that we grabbed from the store. And then
- 00:06:34a little bit of salt and sugar, a half a
- 00:06:36teaspoon of each of those. Then two
- 00:06:38teaspoons of baking powder. You're going
- 00:06:41to whisk these dry ingredients all
- 00:06:43together. Like I said, this is such an
- 00:06:45easy bread recipe. It is great if you
- 00:06:48were on a budget because it doesn't have
- 00:06:50any crazy ingredients in it. Also, you
- 00:06:52don't have to let it rise for hours. So,
- 00:06:54it really is wonderful. After you whisk
- 00:06:56those dry ingredients together, add in
- 00:06:583/4 cup of warm water. Just whisk it
- 00:07:01until it kind of forms a dough. It will
- 00:07:03take a couple of minutes. Now that it
- 00:07:05kind of looks like this, I'm going to
- 00:07:06work it together with my hands a little
- 00:07:08bit. And then once it is no longer
- 00:07:11sticky and everything is combined, I am
- 00:07:13going to knead it on my countertop for
- 00:07:16about 3 to 5 minutes. You could always
- 00:07:18make a double batch of this bread. Um,
- 00:07:21I'm just doing one loaf today, but like
- 00:07:24I said, you could do a double batch if
- 00:07:26you would like. Now that I've been
- 00:07:27kneading my bread for about 3 to 5
- 00:07:30minutes, I'm just going to form it into
- 00:07:32a rectangle shape. And then I'm going to
- 00:07:34score the top of it just with a knife
- 00:07:37kind of just like this. And then I'm
- 00:07:39placing it onto my sheetpan. I'll be
- 00:07:41baking this in my preheated oven to
- 00:07:44425° for about 15 minutes. After 15
- 00:07:47minutes, I'm going to lower the
- 00:07:49temperature to 350 and I'll bake it for
- 00:07:51an additional 10 minutes. I'm getting
- 00:07:54started on lunch right now. I'm actually
- 00:07:56going to batch prep this rice as well.
- 00:07:59My husband's actually at the library
- 00:08:00with my little ones, so I have a little
- 00:08:03extra time to kind of like batch cook
- 00:08:05things. So, I'm batch cooking this rice.
- 00:08:07I'm just rinsing it right now. Same with
- 00:08:09the pinto beans. Just getting any debris
- 00:08:11off, making sure it's super clean. Now,
- 00:08:14let's go throw this rice in my Instant
- 00:08:16Pot. I'll just toss my rice right in my
- 00:08:18Instant Pot. Then, I'm also going to add
- 00:08:20in about 3 cups of water. You could add
- 00:08:23in any seasonings you'd like, like
- 00:08:25Italian seasoning, garlic powder, onion
- 00:08:27powder, paprika, but I'm just keeping it
- 00:08:29simple for today. Plus, I really do
- 00:08:32love, you guys, like biscuits. Love
- 00:08:33gravy. I'm just going to press the rice
- 00:08:36button and it is just going to cook
- 00:08:38itself. You could also cook this rice in
- 00:08:41like a pot on the stove or however you
- 00:08:42choose to do so. I like using my Instant
- 00:08:44Pot just because it's kind of failproof
- 00:08:46to cook rice. So, let's get that going
- 00:08:49and then I'm going to get started on
- 00:08:50lunch. I haven't snacked in between
- 00:08:52breakfast and lunch, which I'm excited
- 00:08:54about, but I'm definitely hungry for
- 00:08:56lunch. For lunch today, we are making a
- 00:08:59carrot rice lentil skillet. I have not
- 00:09:03made this before, but I'm quite excited
- 00:09:05about it. I kind of just came up with
- 00:09:06it, and it sounds really good. Kind of
- 00:09:09like peel the outside layer off of them,
- 00:09:12and then I'm going to cut them into
- 00:09:13smaller pieces. I'm also going to dice
- 00:09:15up about a fourth of my jalapeno. It
- 00:09:18will add great flavor and different
- 00:09:20nutrients like vitamin C. And then I'm
- 00:09:22also going to be using a fourth of my
- 00:09:24yellow onion. And I'm going to dice it
- 00:09:25up. I'm not using my whole yellow onion
- 00:09:27just because I want my yellow onion for
- 00:09:29other recipes as well. I'm just adding
- 00:09:31in my oil now. And then to the hot oil,
- 00:09:33I'm adding in my carrots, onion, and
- 00:09:35jalapeno. I have some oil on hand, but
- 00:09:38if you don't have oil on hand, you could
- 00:09:39always use like butter, other types of
- 00:09:41oil, or you could use water to saute
- 00:09:44your veggies. I've sauteed my veggies a
- 00:09:46few times on my channel in water and it
- 00:09:48really works out super duper well. But
- 00:09:50I'll let these veggies cook for about 6
- 00:09:52minutes on my stove. I just measured out
- 00:09:55about 3/4 cup of lentils. I have plenty
- 00:09:57more lentils in my bag to do other
- 00:09:59things with. But now I'm just going to
- 00:10:01add my lentils into this mesh strainer.
- 00:10:03And I'm going to rinse my lentils kind
- 00:10:05of like how I did with the rice and the
- 00:10:08pinto beans. You want to look through
- 00:10:10your lentils. You want to look for like
- 00:10:11any broken lentils or you know anything
- 00:10:14like that, but just give them a good
- 00:10:15rinse just because they are grown in the
- 00:10:18ground. To my softened veggies, I'm
- 00:10:20adding in my
- 00:10:22lentils. Next, I'm adding in my three
- 00:10:25cups of water. Then, I'm going to toss
- 00:10:27in my seasonings. I'm going to use about
- 00:10:29a teaspoon of Italian seasoning. You
- 00:10:32could go ahead and use any seasonings
- 00:10:33that you like or have on hand, but these
- 00:10:35seasonings are fairly affordable. Don't
- 00:10:38mind me with my whole container of salt.
- 00:10:41Um, just because I'm fancy like this,
- 00:10:43you know. Anyway, add in some pepper and
- 00:10:46then garlic powder and onion powder. And
- 00:10:48then I'm going to let this simmer on my
- 00:10:50stove for about 20
- 00:10:52minutes. Here is what the rice is
- 00:10:54looking like out of the Instant Pot.
- 00:10:56Now, as you could see, it is looking
- 00:10:58nice and fluffy. I only need about a cup
- 00:11:01and a fourth for my lunch today. So,
- 00:11:04I'll only be using about this much since
- 00:11:06my lunch does have lentils in it.
- 00:11:08Lentils are super high in protein and
- 00:11:10they're also super filling. So, with the
- 00:11:12rest of this rice, I'm going to store it
- 00:11:13in a container and I'll keep it in my
- 00:11:16fridge. It lasts in the fridge up to 4
- 00:11:18days. And then whatever I don't eat or I
- 00:11:22use in 4 days, I'll just stick it in my
- 00:11:24freezer. And rice actually is great in
- 00:11:26the freezer. And then whenever I freeze
- 00:11:28it, I just like to add a little bit of
- 00:11:30water with the rice and then it reheats.
- 00:11:33wonderfully. There you go. I'll be using
- 00:11:34this now and I'll be saving this in my
- 00:11:36fridge slash freezer for this next week.
- 00:11:39Don't know what I'll make with it yet,
- 00:11:40but hoping I'll make some yummy meals.
- 00:11:42My little ones are just getting back
- 00:11:44from library story time with my husband
- 00:11:47right now. But here's what my lunch is
- 00:11:49looking like for today. My lentils are
- 00:11:51still cooking. I really like my lentils
- 00:11:54to be super soft, like pillowy soft on
- 00:11:57the inside. As you see, they're kind of
- 00:11:58still hard. So, I like to almost
- 00:12:01overcook my lentils. That's the way I
- 00:12:03like them to be. But just make sure you
- 00:12:05stir it every once in a while while it
- 00:12:07is simmering. Now that my lentils are
- 00:12:10pretty tender, I'm just going to stir in
- 00:12:11my cooked white rice. I'll just give it
- 00:12:14a good stir. Let it absorb any excess
- 00:12:17like moisture. Lentils are my favorite
- 00:12:20substitute for meat just because they're
- 00:12:23so high in protein. They're high in
- 00:12:24different nutrients. They're high in
- 00:12:26iron. Also, to go along with the lunch
- 00:12:29for today, I am going to be serving it
- 00:12:31with a couple of slices of the bread. I
- 00:12:34don't know if I'll eat both slices, but
- 00:12:36I'm going to serve it with both slices,
- 00:12:38and I'll see how much I eat. So, this is
- 00:12:41just a ton of food. So, I'm thinking
- 00:12:42this is going to be like three different
- 00:12:44days of lunches for me. This also has
- 00:12:47nutrients from the carrots and all the
- 00:12:50different seasonings, jalapeno, and
- 00:12:52onion. So, this is a great nutrientrich
- 00:12:54lunch. Um, that was actually really easy
- 00:12:57to make. So, I'm excited about lunch
- 00:12:59today. Like I said, I think this is
- 00:13:01going to get me lunches days two and
- 00:13:03three, but I will let you know in the
- 00:13:05next couple days. It is about 12:00
- 00:13:07right now, and my beans have been
- 00:13:08soaking just for a little while. As you
- 00:13:11see, they don't look like regular dry
- 00:13:13beans anymore. They're kind of like
- 00:13:15they've expanded slightly. So, I'm just
- 00:13:17putting them in my Instant Pot just so I
- 00:13:20could get them cooking for my dinner
- 00:13:22tonight. So, I added them in my Instant
- 00:13:24Pot, and I'm going to add a bunch of
- 00:13:26water. Um, just because you want those
- 00:13:28beans to be covered pretty high in the
- 00:13:32water, just because they expand so much.
- 00:13:34And if you're not going to be watching
- 00:13:35your beans all day in the slow cooker,
- 00:13:38was I saying Instant Pot? If I was
- 00:13:40saying Instant Pot, I mean slow cooker.
- 00:13:42Um, if you're not going to be watching
- 00:13:44your beans all day in the slow cooker,
- 00:13:47you want to make sure the water is like
- 00:13:49to the top just so your beans can expand
- 00:13:52and grow. But I just added in some chili
- 00:13:55pepper, basil, and then I'm going to add
- 00:13:58in paprika and oregano. These seasonings
- 00:14:01are super duper good with beans. These
- 00:14:04are pretty simple seasonings. Um, and
- 00:14:06they're pretty affordable containers as
- 00:14:09well. I'm covering this with the lid and
- 00:14:11I'm going to cook it on high for about
- 00:14:13five to six hours and I'll see how the
- 00:14:15beans are looking at that point. It is
- 00:14:17now about five o'clock and I'm getting
- 00:14:19started on dinner. I am making these
- 00:14:22lentil potato pinto bean burritos. They
- 00:14:25are absolutely amazing and I'm making
- 00:14:27them with homemade flour tortillas. I
- 00:14:30have made these flour tortillas on my
- 00:14:31channel in the past and they were just a
- 00:14:34huge hit. I haven't made them in years
- 00:14:35though, so we are making them right now.
- 00:14:38I just added to my 2/3 cup of water
- 00:14:40about a teaspoon of salt. And now into
- 00:14:43this bowl, I am going to add in about
- 00:14:46two cups of our allpurpose flour. And
- 00:14:48then I'm going to add in 5 tablespoon of
- 00:14:51olive oil. I'll mix the olive oil in
- 00:14:53with the flour just until it gets kind
- 00:14:56of crumbly and combined. I really love
- 00:14:58these flour tortillas just because they
- 00:15:00are a super affordable, easy flour
- 00:15:02tortilla recipe to make. Like I said,
- 00:15:04I've been making them for years. You
- 00:15:06don't need any like wild ingredients. A
- 00:15:09lot of these ingredients are pantry
- 00:15:10staples that you might already have on
- 00:15:12hand. So, great flour tortilla recipe. I
- 00:15:14just added in my 2/3 cup of water. This
- 00:15:17is warm water. You want to make sure you
- 00:15:18add in You just kind of want to stir
- 00:15:20this together until it gets well
- 00:15:22combined and it is kind of like a ball.
- 00:15:25I noticed that mine's a little bit
- 00:15:26sticky, so I'm adding in slightly more
- 00:15:29flour. You just don't want it to be too
- 00:15:31sticky. You kind of want it to be like
- 00:15:33elasticy and hold its shape. Now that my
- 00:15:36dough kind of looks like this, it's like
- 00:15:38a little bit elasticky. I'm going to
- 00:15:40just flour my surface. And then I am
- 00:15:43going to knead the dough on my surface
- 00:15:45for about 4 minutes. After I'm finished
- 00:15:48kneading my dough, I'm just going to
- 00:15:49place it back into this bowl that I
- 00:15:52mixed it in. And I'm going to place a
- 00:15:54warm towel over the top of it. Or if you
- 00:15:57don't have a warm towel, you could just
- 00:15:58place a normal towel over the top of it
- 00:16:00and let it kind of sit and rest for
- 00:16:01about 20 minutes. We are getting started
- 00:16:04on the pinto bean burrito filling now.
- 00:16:07So, I just cut up about four rusted
- 00:16:10potatoes from our bag. I peeled them and
- 00:16:12I diced them. I just also checked over
- 00:16:15at the pinto beans and they are like so
- 00:16:17pillowy soft. So, I'm so glad those
- 00:16:20pinto beans cooked nicely today. I just
- 00:16:23added those cut up potatoes into my bowl
- 00:16:26along with about a/4 a cup of lentils.
- 00:16:29Those lentils are just going to add a
- 00:16:31lot to these burritos. And then I added
- 00:16:33in about 5 cups of water. You're going
- 00:16:35to let this simmer for about 20 minutes
- 00:16:37or until those lentils are tender.
- 00:16:39Here's what my pinto beans are looking
- 00:16:41like after simmering all day in my slow
- 00:16:43cooker. I'm going to remove about two
- 00:16:46cups of the pinto beans for tonight's
- 00:16:48dinner, my lentil potato um pinto bean
- 00:16:51burritos. And then I'm going to save the
- 00:16:53rest of the pinto beans for future meals
- 00:16:56I decide to make this week. But I really
- 00:16:59think cooking the pinto beans in the
- 00:17:00slow cooker like this, it's just the
- 00:17:02best way to cook pinto beans. They just
- 00:17:04come out perfectly cooked every time. I
- 00:17:07just love cooking them in my slow cooker
- 00:17:09like this. But I'll add the rest of my
- 00:17:11pinto beans into this large bowl. I
- 00:17:13don't have like a Tupperware container
- 00:17:16big enough to fit all of these beans
- 00:17:18plus some of the juice. So this big bowl
- 00:17:21should work. Also, I do want to let you
- 00:17:23know when you are storing your pinto
- 00:17:24beans in a large container you're batch
- 00:17:27cooking them like this, make sure you do
- 00:17:29add in about a cup of the broth that the
- 00:17:32pinto beans are cooking in just so your
- 00:17:34pinto beans don't dry out. So, that's
- 00:17:37just for best results. I learned that
- 00:17:38when my husband and I were eating pinto
- 00:17:41beans like every single week. We were
- 00:17:43making pinto bean burritos. We were
- 00:17:45making everything with pinto beans
- 00:17:47because that's basically all we could
- 00:17:49afford for a long time period there. The
- 00:17:51time is basically up for letting my
- 00:17:54dough rest for my tortillas. So, I'm
- 00:17:56going to flour my surface just slightly.
- 00:17:59And then I'm going to divide my dough
- 00:18:02into about 10 balls. So, you want to
- 00:18:05make about 10 tortillas. That's kind of
- 00:18:08the goal with this amount of dough. You
- 00:18:10could always double this recipe or half
- 00:18:13it, but this is kind of what I'm aiming
- 00:18:15for is 10 tortillas. And then roll them
- 00:18:17out super thin. I always say the thinner
- 00:18:19the better. just because they do kind of
- 00:18:22bubble up while they are cooking. So,
- 00:18:24roll them out super thin. Once you have
- 00:18:26your tortillas super thin like this,
- 00:18:27you're going to bring them over to a hot
- 00:18:29pan on the stove and cook them for about
- 00:18:31a minute or two on each side or until
- 00:18:34they're golden brown and cooked.
- 00:18:35Whenever we want something with like
- 00:18:37tortillas or wraps and we don't have
- 00:18:39tortillas or wraps on hand, I actually
- 00:18:42make these homemade tortillas just
- 00:18:43because you don't have to let them rise
- 00:18:45all day. You don't even have to let them
- 00:18:47rise an hour. just 20 minutes makes for
- 00:18:49the most perfect tortillas. So, if you
- 00:18:52are looking to make some homemade
- 00:18:53tortillas on a budget, love this recipe.
- 00:18:56Tortillas can also be pretty expensive
- 00:18:58at the store. So, these homemade ones
- 00:19:00are really amazing. I still have my
- 00:19:02tortillas cooking off to the side. But
- 00:19:04now that my lentils and potatoes are
- 00:19:06tender, I'm just going to strain the
- 00:19:08liquid out of this. I'm not going to
- 00:19:09show you me straining it, though, just
- 00:19:11because to say that my sink is
- 00:19:13overflowing with dishes is kind of an
- 00:19:15understatement. To the same pot, add in
- 00:19:18those cooked pinto beans. Then you're
- 00:19:20going to want to season this up just so
- 00:19:22it's not bland. Nobody likes bland food.
- 00:19:25I'm using salt and pepper. I'm also
- 00:19:27going to be doing some paprika. And then
- 00:19:30I'll be doing a slight bit of Italian
- 00:19:32seasoning, garlic powder, onion powder,
- 00:19:34oregano, and cumin. Can't forget about
- 00:19:37my onion. I'm adding in a small amount
- 00:19:39of diced onion. And then you're going to
- 00:19:41let this cook together for about five,
- 00:19:44six more minutes. You kind of want
- 00:19:46everything to heat through. You want
- 00:19:47that onion to slightly cook. Funny story
- 00:19:49about these burritos. A little while
- 00:19:51ago, a few weeks ago, they actually went
- 00:19:54kind of like small scale viral. Thank
- 00:19:57you guys for making my lentil burritos
- 00:20:00semi smallcale viral. I really, really
- 00:20:03appreciate it. I made them on my channel
- 00:20:06a couple months ago and a lot of you
- 00:20:08guys have been liking these burritos.
- 00:20:09So, thank you so much for the support.
- 00:20:12It really does mean a lot to me and my
- 00:20:14family when you share my videos and you
- 00:20:16like them. The potato, lentil, and bean
- 00:20:19mixture is through simmering. I know it
- 00:20:21doesn't look amazing right now, but let
- 00:20:23me tell you, it smells so good. It It
- 00:20:26smells really delicious. And here are
- 00:20:27the tortillas. After I cooked all of
- 00:20:29them, I actually covered them with a
- 00:20:32towel just so they could stay um so you
- 00:20:34could still, you know, kind of like wrap
- 00:20:36them up. But I'm going to fill these
- 00:20:38tortillas up. I'm only going to fill up
- 00:20:42a couple of them for tonight. I'm only
- 00:20:44going to be using a couple tonight. I'll
- 00:20:46be using the rest of these tortillas
- 00:20:48either throughout my week or in the next
- 00:20:50couple days depending on what I feel
- 00:20:52like I'm going to be eating for dinner.
- 00:20:53But this is about how much I'm going to
- 00:20:55eat for tonight. I am feeling pretty
- 00:20:58hungry right now, but this is a lot of
- 00:21:00food. Also, I'm going to be topping it
- 00:21:02with a little bit of diced tomato and
- 00:21:04jalapeno for added freshness and
- 00:21:06nutrients. After I would fill my
- 00:21:08tortillas, typically I would heat the
- 00:21:10tortilla up on the outside of the
- 00:21:12tortilla on the stove again with like
- 00:21:14normal basic flour tortillas that I
- 00:21:16would buy at the store. But since these
- 00:21:19are homemade tortillas and they're
- 00:21:20already crisped on the outside, I am
- 00:21:22just going to eat it like this. I do not
- 00:21:24need to reheat these tortillas again on
- 00:21:27the stove. They're cooked to perfection.
- 00:21:29Delicious. And I am so excited about
- 00:21:32dinner tonight. Also, if I'm looking a
- 00:21:34little bit more tired than earlier, I
- 00:21:36am. I was running outside with my little
- 00:21:38ones for a while, and I was sweating
- 00:21:40quite a bit, to say the least. So, this
- 00:21:44dinner is so high in protein from those
- 00:21:46beans, lentils, and then the potatoes
- 00:21:48are a great affordable filler. I'm
- 00:21:50really pleased with dinner tonight. I do
- 00:21:52not feel like I'm eating on an extreme
- 00:21:54budget right now. To store the tortillas
- 00:21:56I didn't eat tonight, I'm going to keep
- 00:21:57them in a Ziploc bag just in my fridge.
- 00:22:00You could, of course, batch prep these.
- 00:22:02So, you could fill these tortillas up um
- 00:22:04with the filling tonight, but I'm just
- 00:22:06going to keep them in a bag and I'll
- 00:22:08fill them up for future meals. I don't
- 00:22:11know if I'm going to be filling like
- 00:22:13burrito bowls with this or what. So,
- 00:22:15that's why I'm not filling it up for
- 00:22:16today. I'm just going to put this in the
- 00:22:18fridge. I know it doesn't look like
- 00:22:19much, but you got to trust me. This
- 00:22:21filling is so good. Here's what
- 00:22:23breakfast is looking like for day two. I
- 00:22:25did two packets of our apple cinnamon
- 00:22:28oatmeal. I just mixed the oatmeal with
- 00:22:30water and I microwaved it. Then I topped
- 00:22:32the oatmeal with a half of a diced
- 00:22:35apple. So I just used half of one of my
- 00:22:38apples, diced it up, and then I'm saving
- 00:22:40the other half of apple just in a
- 00:22:42container. And then to prevent the apple
- 00:22:44from browning, I'm adding in some water.
- 00:22:47If you don't have citrus to add onto
- 00:22:48your apple, I definitely recommend using
- 00:22:50water. Water really helps save apples
- 00:22:53from browning. But I am just going to
- 00:22:55eat this. And at this point, I'm
- 00:22:57actually feeling really good. I don't
- 00:22:59feel any different from like what I
- 00:23:01normally eat. The only thing is I'm not
- 00:23:03feeling hungry in between meals. These
- 00:23:06meals have been pretty pretty heavy.
- 00:23:08They're really high in protein and
- 00:23:10different nutrients. So, I'm not feeling
- 00:23:12like I need to snack in between
- 00:23:13breakfast and lunch and lunch and
- 00:23:15dinner. But, I will see how today goes
- 00:23:17in the rest of this week. I'm really
- 00:23:20curious to see how I will be feeling by
- 00:23:22day
- 00:23:23four. Lunch. Day two. I am eating some
- 00:23:26more of my lentil, carrot, and rice
- 00:23:28skillet that I made yesterday. I'm not
- 00:23:30eating all of the leftovers. I'm just
- 00:23:32eating about half of the leftovers. So,
- 00:23:35not all of it. I'll be saving the other
- 00:23:37half for like lunch tomorrow or really
- 00:23:38whenever I want to eat it. But, I'm also
- 00:23:41serving it with a slice of rustic bread
- 00:23:43on the side. This smells so good. I
- 00:23:46actually took a bite out of it and it
- 00:23:48tastes just as good as it did yesterday.
- 00:23:50I know not all leftovers reheat well,
- 00:23:52but this certainly does. Also, it's
- 00:23:55hailing outside. So, if you hear a
- 00:23:56noise, it's like snow hailing. But
- 00:23:59anyway, I'm excited to eat this. And I
- 00:24:02will see you at dinner time tonight. It
- 00:24:04is a little after 7:00 p.m. right now.
- 00:24:07So, I'm getting a later start on dinner
- 00:24:08than I would normally like to. But, you
- 00:24:10know what? That is okay because I batch
- 00:24:13cooked so much yesterday. So, I'm not
- 00:24:15needing to like make a full meal for
- 00:24:18myself right now because I batch cooked
- 00:24:20so much yesterday. All I did was I
- 00:24:23heated up my tortilla for about a minute
- 00:24:25in the microwave and I heated up a
- 00:24:28portion of my lentil, pinto bean, and
- 00:24:31potato filling in the microwave. I
- 00:24:33heated that up for about 2 minutes. And
- 00:24:35then I'm just topping this with some of
- 00:24:37my onion, tomato, and jalapeno. I'm just
- 00:24:40topping it with that just for added
- 00:24:42freshness. And then there you go. That
- 00:24:44took me like 3 minutes to throw
- 00:24:47together. I have so much of this left
- 00:24:50and I'm excited about that. It's not
- 00:24:53like I'm scraping the bowl clean right
- 00:24:55now. There's a ton left. So, if I want
- 00:24:58another burrito or like kind of like
- 00:25:00burrito bowl tonight, I can. I don't
- 00:25:02have to limit myself right now. So, that
- 00:25:05is wonderful. But, I'm going to sit down
- 00:25:07and eat this. I'm now on breakfast for
- 00:25:09day three. And I'm having two packets of
- 00:25:11oatmeal. Again, I just cooked it in
- 00:25:13water. I just added one of my bananas on
- 00:25:15top of the oatmeal. I no longer have
- 00:25:18enough oatmeal to do two packets a day.
- 00:25:20So, for the next days, I'm no longer
- 00:25:22going to be doing two packets of oatmeal
- 00:25:25a day. I'll just be doing one. But, I'm
- 00:25:26about to eat my breakfast now. It is
- 00:25:29about 12:30 right now. I'm eating lunch
- 00:25:32a little bit later than I normally do.
- 00:25:34But, I'm about to heat up the rest of my
- 00:25:36lentil, rice, and carrot skillet right
- 00:25:38now in my microwave. I'm just going to
- 00:25:40heat it up like this in my storage
- 00:25:42container because I'm going to be eating
- 00:25:44all of this for lunch right now. I'm
- 00:25:45also going to be serving it alongside a
- 00:25:47slice of my rustic bread. For dinner
- 00:25:50tonight, I am just eating some of the
- 00:25:52potato, lentil, and pinto bean filling.
- 00:25:55I'm not doing it with a burrito. I'm
- 00:25:57just doing it kind of like as a burrito
- 00:26:00bowl. I am also topping it with some
- 00:26:02slices of tomato. I'm not doing the
- 00:26:04jalapeno or onion. I'm thinking I want
- 00:26:06to save the rest of the jalapeno and
- 00:26:08onion for something else. But this is
- 00:26:10what I'm having for dinner tonight. I do
- 00:26:11have some left just in case I want to
- 00:26:13snack on it throughout the week or
- 00:26:15something, but I have some left. But
- 00:26:16here is what dinner is looking like. I
- 00:26:18know it doesn't look gorgeous, but it
- 00:26:20truly is so good. It is so bold in
- 00:26:22flavor. You could add any seasonings to
- 00:26:25it, like I said before. But I'm going to
- 00:26:27go eat this. It's delicious. I am now on
- 00:26:30breakfast day four. I since I ran out of
- 00:26:33doing two little packets of oatmeal each
- 00:26:35day yesterday, I am doing one packet of
- 00:26:38oatmeal today. I have my oatmeal here.
- 00:26:40I'm just going to put the other half of
- 00:26:43the apple over the top for breakfast
- 00:26:45today. I do still have one apple left.
- 00:26:48I'm thinking I will either have it for a
- 00:26:49snack or the rest of the days for
- 00:26:52breakfast. Also, I do want to mention
- 00:26:54yesterday I ate the last banana. I was
- 00:26:57making banana muffins for my little ones
- 00:27:00and I didn't have enough bananas. So, I
- 00:27:03used the last banana for the banana
- 00:27:06chocolate chip muffins. And I did have
- 00:27:08one of these yesterday, but I only ate
- 00:27:10one. And besides this, I didn't snack on
- 00:27:12anything else. So, I had one banana
- 00:27:15chocolate chip muffin yesterday that I
- 00:27:17made for my little ones. And then I did
- 00:27:19eat the last banana because I made it in
- 00:27:22the banana chocolate chip muffin. So, I
- 00:27:24don't have any more bananas left. And I
- 00:27:27made these muffins for my little ones.
- 00:27:29I'm getting started on lunch for today.
- 00:27:31I am making a potato lentil curry and I
- 00:27:34am just overly excited about it. I just
- 00:27:36started out by measuring out the last of
- 00:27:38my lentils. I have about a cup and a
- 00:27:41half of lentils left and I'm just going
- 00:27:43to go ahead and rinse them. Now I am
- 00:27:46going to cut up my vegetables. So I'm
- 00:27:49going to start with my potatoes. There's
- 00:27:52about five of them. This one's huge. And
- 00:27:54I still have three potatoes left in my
- 00:27:56bag. I'll probably also dice up a
- 00:27:58quarter more of my onion. And as you
- 00:28:01see, I have quite a few carrots left. I
- 00:28:03have about eight small to medium sized
- 00:28:06carrots here. I'll dice those up. And
- 00:28:08then I have three carrots left in my
- 00:28:10bag. Over to this large pot on my stove.
- 00:28:13It's on about mediumigh heat. I added in
- 00:28:16a tablespoon of olive oil. Now I'm going
- 00:28:18to add in my diced onion and carrots.
- 00:28:21I'm not going to add the potatoes in
- 00:28:23right now, or at least I'm going to try
- 00:28:25not to add them in. A couple of them
- 00:28:27might fall in, but I'll add the potatoes
- 00:28:29in in just a little bit. I really want
- 00:28:31those carrots and the onion to kind of
- 00:28:33sauté and cook together. It's going to
- 00:28:35give them a lot of delicious added
- 00:28:38flavor. Now that my veggies are finished
- 00:28:40sautéing, I'm adding in about 2 tepoon
- 00:28:43of curry powder. I'm also going to be
- 00:28:45adding in a teaspoon of garlic powder
- 00:28:48and onion powder. Next, I'm adding in a
- 00:28:50half a teaspoon of cumin. The cumin adds
- 00:28:53a pop of flavor. That curry smells so
- 00:28:55good right now. You also want to add in
- 00:28:57about a teaspoon of salt. It's not going
- 00:29:00to be too salty just because there's
- 00:29:02going to be so much food in this. The
- 00:29:04potatoes are going to absorb some of
- 00:29:06that salt. Same with the lentils and
- 00:29:09it's just going to be super flavorful in
- 00:29:11the end. Now I'm going to add in
- 00:29:13basically the rest of my ingredients. So
- 00:29:14I'm adding in four cups of water. Then
- 00:29:17I'm adding in my rinsed
- 00:29:19lentils. These are the last of the
- 00:29:22lentils that I have. Next, I diced up
- 00:29:24the last of my Roma tomato and I'm
- 00:29:27adding that in there. I'm also tossing
- 00:29:29in my potatoes. Now, I'm going to give
- 00:29:31this a good stir and I'm going to let it
- 00:29:33simmer on my stove for about 20 minutes,
- 00:29:36mainly to cook those lentils and the
- 00:29:39potatoes. You want the lentils to be
- 00:29:41super soft in the end. This curry has
- 00:29:44been simmering for about 15 minutes so
- 00:29:46far, and it is smelling so good. It
- 00:29:49smells like normal curry. It smells
- 00:29:51amazing. If you do notice the lentils
- 00:29:54need a little bit more water to cook in,
- 00:29:56just add about a half to one more cup of
- 00:29:58water at a time until those lentils are
- 00:30:00cooked. I'm going to let this cook for
- 00:30:03just about I'd say 5 10 more minutes
- 00:30:06until those lentils get to the softness
- 00:30:08that I like them to be. While my curry
- 00:30:11finishes cooking on the stove, I am
- 00:30:13going to heat up my rice. I haven't used
- 00:30:15any of my rice that I cooked up in the
- 00:30:18beginning of the week since I cooked it
- 00:30:20up. So, I am going to heat some up
- 00:30:22today. Um, since today is day four with
- 00:30:25the rice, I am going to freeze the rest
- 00:30:27of my rice. Rice lasts in the fridge for
- 00:30:30up to about 4 days. So, I'll freeze this
- 00:30:33and then it is going to stay super well
- 00:30:35in the freezer for however long I really
- 00:30:38want it to be in my freezer, you know,
- 00:30:40whenever I make the next meals. Also, to
- 00:30:44go along with my rice heating up, I do
- 00:30:46have more tortillas that I batch cooked
- 00:30:49in the first of the week. So, I am also
- 00:30:51going to be heating up a tortilla on the
- 00:30:54side. I thought that sounded really
- 00:30:55super good. So, I'm going to microwave
- 00:30:57these two and my um curry is going to
- 00:30:59finish cooking up right now. Here's what
- 00:31:02my curry is looking like all plated up
- 00:31:04in this bowl. I have the rice on the
- 00:31:07bottom so you could barely see it. And
- 00:31:08then I have the tortilla. The tortilla
- 00:31:10is kind of going to act as like naan
- 00:31:12bread. This is smelling amazing. Also, I
- 00:31:15do want to let you know if you want to
- 00:31:17add to this curry and you have some like
- 00:31:19tomato sauce on hand, tomato paste, you
- 00:31:21could always add in tomato sauce or
- 00:31:23tomato paste. You could add in coconut
- 00:31:25milk. You could add in heavy cream. You
- 00:31:27could add in bell peppers, cilantro. You
- 00:31:30could really add to this curry. But this
- 00:31:32is a great base for like a really
- 00:31:34affordable, inexpensive curry on a
- 00:31:37budget that still tastes delicious. So,
- 00:31:39you could always add to this curry, but
- 00:31:41this is a wonderful base. Like I was
- 00:31:42saying, this lunch is absolutely out of
- 00:31:45this world delicious, and I have so much
- 00:31:49left over. So, I'm really excited. I'm
- 00:31:51going to be eating this. I'm thinking
- 00:31:53maybe for lunch tomorrow, but not 100%
- 00:31:56sure yet. I'll check back with you at
- 00:31:58dinner time tonight. I basically ate
- 00:32:00everything, but not all of the tortilla.
- 00:32:03Tortilla was super good, but loved the
- 00:32:05lentil curry the best. That was amazing.
- 00:32:08It is about 5:30 right now and I'm
- 00:32:11getting started on dinner. For dinner
- 00:32:13tonight, we are making pinto bean potato
- 00:32:15burritos. So, I'm going to get started
- 00:32:17on my potatoes first. To my cutting
- 00:32:19board, I have about three potatoes left.
- 00:32:21So, I'm going to peel those and I'm
- 00:32:22going to dice them up. I also have about
- 00:32:25three carrots left in my bag. So, I'm
- 00:32:27also going to dice those carrots up. And
- 00:32:30I have a little bit of my yellow onion
- 00:32:32left. So, I'll go ahead and dice that
- 00:32:34onion up, too. Now for my potato lentil
- 00:32:37burrito filling. To a pan on the stove,
- 00:32:39add in your potatoes, carrots, and
- 00:32:42onion. I didn't use all of my onion. I
- 00:32:44still have some fresh onion left. I
- 00:32:47could top with, you know, some of the
- 00:32:49rest of my meals, but just add these
- 00:32:51veggies right in here. Then you're going
- 00:32:53to want to add in water. You want to
- 00:32:55kind of like boil and soften the
- 00:32:58potatoes and the carrots. Also, if you
- 00:33:01are wondering what my little ones and
- 00:33:02will have been eating this week, they
- 00:33:04are just eating what they would normally
- 00:33:05eat throughout the week. This is eating
- 00:33:07off of $12 for an entire week for
- 00:33:10myself. So, for one person. And I do
- 00:33:12want to let you know how it's been
- 00:33:14going. So, I was kind of curious how I'd
- 00:33:16be feeling by day four, which is today.
- 00:33:19And I am feeling great. I feel like I'm
- 00:33:21getting enough protein. I feel like I'm
- 00:33:22getting enough nutrients. I've been
- 00:33:24sticking to my meal plan really, really
- 00:33:26well. I'm excited to see how the rest of
- 00:33:28this week goes. And I'm really hoping
- 00:33:30that I'm able to have enough food to get
- 00:33:32me through day seven. That is my goal at
- 00:33:35this point. But I'm excited for dinner
- 00:33:37tonight. You have to trust me at this
- 00:33:39point. I know this isn't looking like
- 00:33:40much yet, but once your potatoes,
- 00:33:43carrots, and um the onion are kind of
- 00:33:45like fork tender. Go ahead and strain
- 00:33:48the water out. And then you're going to
- 00:33:49add in all of the pinto beans. So the
- 00:33:52pinto beans that we cooked up earlier
- 00:33:53this week, add them right into your pan.
- 00:33:56And then you're going to add in any
- 00:33:58seasonings that you like. Today, for the
- 00:34:00seasonings, I'm doing a little bit of
- 00:34:02salt, pepper, garlic powder, onion
- 00:34:04powder, chili powder, and cumin. I
- 00:34:06really think those seasonings would work
- 00:34:08super well in this dish. Give this a
- 00:34:11stir. And since the beans, potatoes,
- 00:34:14carrots, everything's cooked through,
- 00:34:16you basically just want to heat through
- 00:34:18the beans at this point. And you want
- 00:34:20the seasonings to, you know, make
- 00:34:23everything extra flavorful. So, give
- 00:34:25this a stir, let it cook, and then you
- 00:34:27could serve this in tortillas or as like
- 00:34:30burrito bowls. Really, however you
- 00:34:32choose to do so. But I am just going to
- 00:34:34be serving this as a burrito bowl today.
- 00:34:36I was originally going to serve this as
- 00:34:38a burrito, but I'm kind of feeling like
- 00:34:40a burrito bowl right now. I have my
- 00:34:42tortillas right here. This one's a
- 00:34:44little cracked because this one's the
- 00:34:45first tortilla that I made and I dried
- 00:34:48it out a little to say the least. But I
- 00:34:50have some tortillas left for this week.
- 00:34:53I have, let me see, I think 1, two,
- 00:34:55three. I have about four tortillas left,
- 00:34:58not including the cracked one if I'm
- 00:35:00counting them right. But this is
- 00:35:02smelling so good. It has so much protein
- 00:35:04from those pinto beans. I'm really not
- 00:35:06missing meat. I was kind of thinking
- 00:35:08that I might be missing like chicken and
- 00:35:11sausage and ground beef at this point in
- 00:35:14the week, but I'm not craving meats. I
- 00:35:16know I haven't had any meats, but the
- 00:35:18meat substitutes, like the lentils and
- 00:35:20the pinto beans, have really, really
- 00:35:22been working as substituting for the
- 00:35:25meat. So, I'm getting enough protein,
- 00:35:26and I'm really feeling good at this
- 00:35:28point in the week. Also, I have plenty
- 00:35:30of this left over. I'm going to let it
- 00:35:32cool down for a moment, then I'll put it
- 00:35:34in a container in my fridge to save for
- 00:35:36a future meal perhaps. Here's what
- 00:35:38breakfast is looking like for day five.
- 00:35:40I did one packet of oatmeal and I have
- 00:35:44two packets left for days six and seven.
- 00:35:46Um, so I'm running low on oatmeal, but
- 00:35:49I'm thinking I'll have enough. I put
- 00:35:51water in my bowl with the oatmeal,
- 00:35:52microwaved it, and then I put diced
- 00:35:54apple on top. I used about a half of a
- 00:35:57diced apple. I'm saving the other half
- 00:36:01um for breakfast for the next couple
- 00:36:03days. But here is what breakfast is
- 00:36:05looking like for day five. Here's what
- 00:36:07I'm thinking lunch is going to be like
- 00:36:09today. So, I'm doing lentil curry. And I
- 00:36:12do want to mention to you, I have some
- 00:36:14of my frozen rice on my plate right now.
- 00:36:17But when you freeze your rice, I
- 00:36:19definitely recommend either reheat all
- 00:36:21of it all at once or portion it out into
- 00:36:24like portions in different containers
- 00:36:26just because it is a little bit tricky
- 00:36:28to um you know, take a portion out of
- 00:36:31frozen rice because it's frozen. I
- 00:36:32totally should have thought ahead, but
- 00:36:34it's working out just fine. And then
- 00:36:36over the frozen rice, I'm going to add a
- 00:36:39couple scoops of the curry. I have so
- 00:36:42much curry left. Um I might see if my
- 00:36:44husband wants some for dinner tonight
- 00:36:46just to try because he loves curry and
- 00:36:49I'm thinking I will have plenty. But I'm
- 00:36:52just going to microwave this for a
- 00:36:53couple minutes. I did add in about a
- 00:36:55tablespoon of water before I microwave
- 00:36:58this just to rehydrate the rice a little
- 00:37:01bit better. But I know it doesn't look
- 00:37:03like much, but seriously, it smells so
- 00:37:05good. It smells identical to like a
- 00:37:08fancy curry. And I'm excited to be
- 00:37:11eating this high protein delicious meal
- 00:37:13for lunch today. I can't believe how
- 00:37:15affordable this is. It is dinner time.
- 00:37:17And for dinner tonight, I am having the
- 00:37:19potato pinto bean carrot kind of like
- 00:37:23burrito bowl filling. So, that is what
- 00:37:25I'm having. I'm just going to have it on
- 00:37:27a plate. I'm not serving it in a
- 00:37:29tortilla just cuz I don't really feel
- 00:37:31like a tortilla tonight. So, I'm going
- 00:37:33to microwave this for a couple of
- 00:37:35minutes. And there you go. Dinner was
- 00:37:37prepped for me. So simple. All I have to
- 00:37:39do is eat it. Breakfast day six. I am
- 00:37:42having oatmeal again. Surprise,
- 00:37:44surprise. And then I have one oatmeal
- 00:37:46packet um for tomorrow. I did top mine
- 00:37:49with a half of a half of a diced apple.
- 00:37:52And then I have the other half in here
- 00:37:54just in water to keep it. But yeah,
- 00:37:58about to eat my breakfast for day six.
- 00:38:00For lunch today, I'm just having my
- 00:38:02lentil curry alongside of rice. I do
- 00:38:05still have some lentil curry um in my
- 00:38:08container right here. I'm just going to
- 00:38:10go microwave this and eat this for lunch
- 00:38:12alongside of my little ones. My little
- 00:38:14ones are eating right now. So, here's
- 00:38:15lunch for myself for today. For dinner
- 00:38:18tonight, I am doing the pinto bean
- 00:38:20potato carrot filling. This is kind of
- 00:38:22like the burrito bowl filling alongside
- 00:38:24of some steamed white rice. So very
- 00:38:27excited for dinner tonight. It really
- 00:38:29smells scrumptious. Breakfast day seven.
- 00:38:32Oatmeal with apple on top. I am
- 00:38:34officially all out of oatmeal. I also do
- 00:38:37not have any more produce left. So no
- 00:38:40more apple. I ran out of banana a couple
- 00:38:43days ago, but breakfast for day seven.
- 00:38:45For dinner tonight, I am making kind of
- 00:38:47like a burrito bowl. So I have a
- 00:38:49tortilla right here. I am going to heat
- 00:38:51it up so it's no longer like, you know,
- 00:38:54cold. And then over the tortilla, I'm
- 00:38:56going to add the last of my rice. Um,
- 00:39:00this is just my frozen rice. And then
- 00:39:02over the rice, I am going to add my
- 00:39:05pinto bean potato kind of like burrito
- 00:39:08filling. So, I'm using the last of this
- 00:39:11filling. And this got me like the
- 00:39:13perfect amount for each of the days. So,
- 00:39:15I'm excited about that. I'm going to go
- 00:39:17heat this up right now. Now that I'm at
- 00:39:20the last of my week, I do want to fill
- 00:39:21you in and I want to honestly tell you
- 00:39:23how I think things actually went this
- 00:39:26week. So, at the beginning of the week,
- 00:39:28my number one goal was to create
- 00:39:30nutrient-rich, healthy meals that would
- 00:39:32give me lots of protein to get between
- 00:39:34meal to meal and not feel like I wanted
- 00:39:36fast food or snacks in between meals. I
- 00:39:39didn't want to feel like I was just
- 00:39:41buying hot dogs from the store to like,
- 00:39:43you know, get by on an extreme budget. I
- 00:39:45wanted to buy groceries at the store
- 00:39:47that would give me lots of fuel and kind
- 00:39:49of stick to my bones. So, I felt good
- 00:39:52throughout the week and I am so happy to
- 00:39:54say I felt so good this week. I'm being
- 00:39:57completely honest with you guys. I
- 00:39:58didn't feel hungry in between each meal,
- 00:40:00which I'm really happy about. Once I
- 00:40:03went down to one oatmeal a day, I did
- 00:40:05feel a little bit hungry in between
- 00:40:07breakfast and lunch. But once I had my
- 00:40:09lunches, the lunches were so filling. It
- 00:40:12got me right through to dinner time,
- 00:40:14which I'm so excited about. I do have
- 00:40:16some items left that I didn't quite
- 00:40:18finish throughout this week, but I'm so
- 00:40:21happy that I was able to get through
- 00:40:22this week off of just $12. I know
- 00:40:24grocery prices have just been so so high
- 00:40:27recently, but I felt like I got the
- 00:40:30nutrients that I needed and wanted. Of
- 00:40:32course, a couple more apples, bananas,
- 00:40:35you know, some peas, broccoli here and
- 00:40:37there would be nice, but for this
- 00:40:39extreme budget, I feel like we did a
- 00:40:41good job this week. Thanks for being
